How Hairy Crab Season Actually Works in Shanghai (2026)

Hairy crab season opens at Yangcheng Lake in late September, but the crabs worth eating arrive in mid October. Here is what they cost and how the vouchers work.

Hairy crab season in Shanghai runs from late September to about December, and the crabs are worth waiting for rather than rushing. Yangcheng Lake opened on 25 September in 2024 and 26 September in 2025, and the 2026 date lands in the same window, announced by the Suzhou authorities a few weeks beforehand. The lake opening is a starting gun, not a peak: the big crabs arrive from mid October. Budget 150 to 320 RMB for a pair to steam at home, or from 300 RMB a head at a crab house.

Every autumn the same thing happens. Someone at work hands you a card with a crab printed on it, a colleague mentions 大闸蟹 in a tone usually reserved for weddings, and the wet market fills with baskets of tied-up crabs that cost more than the fish next to them. Then someone tells you the season has already started, someone else says to wait, and a third person warns you the vouchers are a scam. All three are partly right.

When does hairy crab season actually start?

The season opens when Yangcheng Lake, an hour outside Shanghai near Suzhou, lifts its fishing ban. That was 25 September in 2024 and 26 September in 2025, and Suzhou announces the exact 2026 date in early September. Crabs from other lakes and from farms reach the market slightly earlier, which is why you will see them in August and hear that the season has started.

It has not, really. Chinese news coverage of the 2024 opening was blunt about it: the first crabs out of the lake are small, and the volume that matters arrives from early to mid October, running through to roughly December. That is the window you want.

There is a second layer of timing that locals take seriously, and it is worth knowing because it changes what you order. The saying is 九雌十雄, ninth month female, tenth month male, counted in lunar months. Females fill with orange roe first, roughly through October, and males follow with the sticky white fat that crab people talk about in November. Order the female half of the season for roe, the male half for richness.

What does a hairy crab actually cost?

More than you expect, and the price swings hard through the season. When the 2024 lake opening was two weeks old, the priciest single crab on sale was going for over 100 RMB each, and a 2023 market reference put four-tael males and three-tael females at 150 to 160 RMB per jin. Prices soften in October as volume arrives, then climb again for the gifting rush.

In US dollars, roughly USD 22 to 47 to cook at home, USD 12 to 30 for a crab dish in a normal dinner, and USD 45 and up for a crab house. Converted at about 6.74 RMB to the dollar, August 2026, so treat the dollars as a ballpark. Prices move week to week through the season, and the first crabs of the year always cost the most.

The honest version: crab is a treat, not a Tuesday. If you want the ritual without the bill, buy two live crabs at a market, steam them belly up for about fifteen minutes, and put the rest of the money into the yellow wine.

Where to buy them without a voucher: the 盒马 (Hema) app delivers graded live crabs the same day and prints the size and sex, which takes the guesswork out of a first order. A wet market lets you pick your own and haggle, but you need to spot a lively crab (legs pulling, heavy for its size, foam at the mouth). Whichever you use, buy them the day you cook, keep them cold and covered, and steam them the moment they stop moving much.

The crab voucher, and how it goes wrong

The 蟹券, a crab voucher, is how China gifts crab. You are given a card, you redeem it online or by phone, and a box of live crabs turns up at your door. It is elegant when it works, and it is the single most common way people get burned.

The failure mode is not usually a fake card. It is a card that quietly cannot be redeemed: the seller has issued more vouchers than crabs, and the redemption line is busy for the whole season until the card expires. Suzhou regulators have publicly targeted exactly this, naming voucher over-issuance, malicious low-price dumping and false advertising on ecommerce platforms as the behaviours they are watching, and the Yangcheng Lake industry association now runs a circuit-breaker mechanism against it.

If you only remember one thing: redeem a crab voucher the week you receive it, not the week you want to eat. A voucher held until November is a voucher competing with everyone else's November.

How do I tell a real Yangcheng Lake crab?

Genuine Yangcheng Lake crabs carry an anti-counterfeit ring from the industry association, and there is a verification hotline printed alongside it, 0512-62582879. The Suzhou government's own consumer advice for the season is refreshingly plain: be suspicious of any price far below the market, and buy from a licensed physical seller or an officially authorised online platform.

Now the part nobody selling you crab will say. Yangcheng Lake is small, the demand for its name is enormous, and a large share of crab sold under that label grew up somewhere else. This is not a disaster. A well-raised crab from Taihu, Gaoyou or Chongming eats beautifully and costs less. Buy the crab, not the postcode, and spend the difference on more crab.

Where to eat hairy crab in Shanghai

The full sit-down version is a Shanghai institution and worth doing once. Wang Bao He at 603 Fuzhou Lu in Huangpu is the address locals name first, a crab house whose whole identity is steamed hairy crab and warm yellow wine. As of August 2026 the average spend runs around 300 to 350 RMB a head, it serves 11am to 1.30pm and 5pm to 9pm, and the phone number is 021-63223673. Book, especially in October and November.

You do not have to go all in. Most good Shanghainese restaurants put crab on the menu in season, and crab roe over rice or crab-meat noodles gives you the flavour for a fraction of the price. How to eat one without making a mess of it

There is a correct order and it takes two minutes to learn. Turn the crab belly up. Lift the triangular flap and pull the shell off. Discard the gills, the stomach sac behind the mouth and the small hexagonal heart, none of which you eat. Then work the roe, then the body, then the legs, dipping in the ginger and vinegar that arrives with it.

Two rules that are about comfort rather than etiquette: drink the yellow wine warm, and skip the cold drinks entirely. Crab is considered cooling in Chinese food thinking, which is why ginger, vinegar and warm wine turn up at every crab table in the country. If you are handed a set of small tools, the 蟹八件, treat it as a party trick rather than a requirement. Nobody minds if you use your hands.
