Pei Jie Lao Huo Guo (Maoming Bei Lu)

Where Chongqing locals go when they miss home. A butter-and-chili broth (牛油锅底) with a slick of red oil that means business, and regulars swear by the tripe (毛肚) and duck intestine (鸭肠). Not the most English-friendly room, but the tablet menu has pictures. Serious heat, done properly.
