Spago Shanghai (Wolfgang Puck)
Wolfgang Puck's Spago, the first in mainland China, on the 21st floor of The St. Regis on the Bund. Contemporary California cooking from Executive Chef Luke Omarzu, with the house classics that made Spago famous in 1982: the smoked-salmon pizza, tuna tartare in sesame-miso cones, miso cod and a tableside wagyu rib. The reason it belongs in an outdoor roundup is the rooftop terrace, which looks straight across the Huangpu at the Oriental Pearl and the Lujiazui skyline, glorious at dusk.
